  24.04.2009 Recipes: Eggs in the Basket

 

A breakfast staple in some parts of the world (we think). We ran across this while watching the film "V for Vendetta". It looked pretty cool, so we tried it out and found that we liked it, and now have added it as a regular in our breakfast series.

Ingredients:

Eggs

Toast Bread

Salt/Pepper/Tabasco to taste

Oil or butter

Preparation:

Cut out the center of the toast bread. We found that a wide square cut is the best, althought a round cut will also work. Be creative..

Put some oil or butter in a hot pan and lightly toast the bread on one side (the cut-out also).

After turning the bread, put an egg in the middle, gently, making sure you don't break the yoke. Here is where creative part comes in. I prefer the whole egg inside the bread. The smaller the hole in the bread the more egg white will end up over the bread.

Season with salt/pepper/tabasco to taste.

Turn and fry on other side.

The longer it cooks on either side the harder the yoke will be. We prefer lightly fried so that we can dunk the cover in the egg yoke...

One of the most enjoyable things about traveling is tasting the local cuisine. Despite this, it is often necessary, or desirable to do your own cooking. The question is what and how. So here are some recipes which can easily be done while traveling, single stove/cooker, and usually one or two pots/pans will suffice. In addition we have found that the whole ritual of deciding what to cook, acquiring the ingredients and then spending the time to cook some "slow" food, it an excellent way to end the day, no matter where you are. Please note none of the recipes are low fat, gluten or lactate free, or in any other manner correctly portioned for a healthy and long life, instead they all taste great and are probably very bad for you...
