  24.04.2009 Recipes: Omelet

 

A classic staple of the traveler, as it is good for using up leftovers from last nights dinner, or pretty much anything lying around.

Ingredients:

Eggs (4-6, depending on how many people, or how large your frying pan is..)

Salt/Pepper/Tabasco to taste

Oil/butter

onion

the following are all optional and amounts depend on number of people and size of cookware. Note this is not an exhaustive list, you can add pretty much anything including left over steak..

green pepper

red pepper

mushrooms

bacon

ham

sausage

cheese

Additional ingredients:

Tomatoes, meat, potatoes, etc...

Preparation:

Cut the onion into small cubes, the smaller the better

Cut rest of the ingredients (with the exeption of the cheese) into bite size or small chunks.

Break eggs into a suitable container, add onions, and salt/pepper/tabasco to taste, and mix thouroughly.

Pour mix into a preheated and lightly buttered skillet.

Cook over low flame until (fairly) firm on top and brown on bottom.

Add remainder of ingredients to half of the omelet finishing by putting the cheese on top of the mixture. Then gently fold the ungarnished half of the omelet over the other. Cook until cheese is melted, and if desired turn over and cook on the other side.

Be careful to not put too much ingredients in the middle, and making it too "thick", as it will be very difficult if not impossible to "close", much less flip over. The thicker it is the longer it will need cooking, and possibly require cooking on both sides, which will then be very difficult.

Note: Depending on the ingredients, it might be desirable to pre-cook them. ie. Fry the ingredients until done as required before putting into middle of omelet.

One of the most enjoyable things about traveling is tasting the local cuisine. Despite this, it is often necessary, or desirable to do your own cooking. The question is what and how. So here are some recipes which can easily be done while traveling, single stove/cooker, and usually one or two pots/pans will suffice. In addition we have found that the whole ritual of deciding what to cook, acquiring the ingredients and then spending the time to cook some "slow" food, it an excellent way to end the day, no matter where you are.
